Wagyu short ribs burnt ends

2 packages Masonhill short ribs
|
2 tablespoons Butter
|
2 tablespoons salt
|
2 tablespoons honey
|
2 tablespoons pepper
|
2 tablespoons yellow mustard
|
1 tablespoon granulated garlic
|
1 cup of your favorite BBQ sauce
|
|

|
|
1) Trim fat down to ¼-½ inch on the ribs. Cut the meat off the bones, then cut them into uniform sized squares .
|
2) Mix the salt, pepper, and granulated garlic together to make the dry rub.
|
3) Lightly coat the ribs in the mustard.
|
4) Sprinkle the dry rub lightly on the ribs. Pat it lightly to set the rub into the meat.
|
5) Let the meat sit in the fridge for at least 2 hrs up to overnight.
|
6) Place directly on the smoker @ 250 and smoke for 3 hrs or until internal temp is 180( you can use a cooling rack to cook them on to make it easier to place them on the grill).
|
7) Heat your bbq sauce, butter , and honey in a sauce pan until warm.
|
8) Place the ribs in a oven safe container.
|
9) Pour the bbq sauce mixture on the ribs and stir until they completely coated.
|
10) Place the ribs back on the grill and continue to cook until they reach an internal temp of 200-205 and are tender.Which should be 1-2 hrs.
11) Let them cool for at least 10-15 minutes. Eat and enjoy!!
